Watermelon Salad Recipe

Summer is coming...and you're probably not ready. 75 % of Americans are chronically DEHYDRATED! No one drinks enough water and honestly it feel impossible (especially when you have to pee every 5 minuets.) My remedy to this dehydration epidemic is to eat my water.



Watermelons are 92% water and super cheap if you get them at your local farmers market. This salad also has cucumbers, which are 95% water! You could go ahead and slice your watermelon up and eat it, OR you could make a fancy watermelon salad that will impress your Instagram followers! The recipe is SUPER simple and 90% of the work is cutting a watermelon.




Ingredients

1 Medium Watermelon (diced in medium cubes)

1 Medium Cumber (sliced)

1/2 C Goat or Feta Cheese


Dressing

1/2 a Lime

1 tsp Honey


Garnish

1 Sprig of Mint


Directions:

1. Toss diced watermelon, sliced cucumbers, and desired cheese together in medium sized bowl.

2. In small separate bowl squeeze lime, and combine with honey until homogeneous.

3. Pour lime/honey mixture over watermelon /cucumber mixture and toss well.

4. Add mint as garnish if desired.




I loved this recipe because it was simple, refreshing, and filling. You could honestly eat the whole salad by yourself, but I would recommend a serving of 4 adults. Enjoy and stay hydrated !
